Leek and Potato Soup

About the Recipe

This is an absolute classic for a reason. If you have any veg hanging about this is the perfect way to use them all up!


  • 50g butter

  • 500g (about 2 medium leeks), washed and sliced

  • 500g potatoes, roughly chopped

  • 1 litre veg stock

  • Approx 300ml of cream


  1. Melt the butter in a pan before adding your leeks. Cook these down for 5 minutes

  2. Add your potatoes, stock, and cream and simmer for around half an hour or until the vegetables have softened before blending until smooth and creamy

    Season generously with salt and pepper before blending. Add water if it’s looking a little thick
