Cut your carrots and parsnips in half lengthways and place into a roasting dish.
Mix your oil with the curry powder and salt before pouring over your veg. Give the veg a mix ensuring they're completely covered in the seasoned oil.
Whack the dish in the oven on 180 degrees Celcius for around 40 minutes or until golden. Optionally, you can drizzle with honey and place back in the oven for a few minutes.
